What is the difference between dry and liquid malt extract?
Dry malt extract (DME) is a powder; liquid malt extract (LME) is a concentrated liquid. Compare the named malt blend and its solids content before changing quantities: equal package weights need not contribute equal solids. This desk-researched guide explains that comparison, not a tested recipe or priming calculation. Follow the recipe, product directions, and equipment manuals; ask the manufacturer or a qualified brewer when a substitution is unclear.
The useful question is not which format wins in general. It is whether the exact replacement matches the job your recipe gives the original ingredient. A clear product name, an appropriate package size, and a documented calculation are more useful than choosing by the letters DME or LME alone.
What should you match before comparing the formats?
Malt extract starts with wort, the liquid separated from mashed grain. The manufacturer concentrates it; producing extract has already involved grain processing. Extract is therefore not simply a bag of crushed malt with the water removed. Briess describes the milling, mashing, separation, and concentration sequence.
First record the complete product identity, not just “light extract.” Include the manufacturer, malt family, dry or liquid form, and whether the recipe names a specific product. Check the ingredient information for wheat or other components instead of assuming all pale-looking extracts share one grain bill.
For example, Briess lists its Pilsen Light extracts as made with 99% Pilsen malt and 1% Carapils malt, plus water. Its wheat extracts use 65% wheat malt and 35% barley malt, plus water. Those are different ingredient profiles, not merely alternative packages for the same material. The manufacturer's extract catalogue supplies the named compositions.

How much of each product is actually solids?
For a specific comparison, the currently linked Briess CBW Pilsen Light information sheets give these typical analyses:

Both sheets explicitly distinguish average analytical information from a guaranteed product specification. These are not universal figures for every extract, nor measurements of your package. Confirm current product information with the supplier. Sources: DME sheet and LME sheet.
Notice the separate solids and fermentability rows. “Solids” must not be relabeled “fermentable sugar.” Matching solids alone does not demonstrate identical fermentation, flavor, or final alcohol content. Nor does this table supply a yeast choice, finished volume, or fermentation procedure.
How does a dry-solids comparison work on paper?
Here is an original, illustrative calculation using the documented typical solids percentages. It is not a brewed recipe, a lot analysis, or permission to substitute ingredients without checking the complete recipe.
Suppose a worksheet contains 3.000 kilograms of the named LME. To compare its typical dry-solids contribution with the named DME:
- Convert the percentages to fractions: 79% becomes 0.79; 97% becomes 0.97.
- Calculate the LME solids: 3.000 kg × 0.79 = 2.370 kg of solids.
- Divide by the DME solids fraction: 2.370 kg ÷ 0.97 = 2.443298969… kg of DME.
In general, the paper calculation is:
Replacement mass = original mass × original solids fraction ÷ replacement solids fraction.
Keep the mass unit consistent throughout. Kilograms entered at the beginning produce kilograms at the end. A mass of syrup is not interchangeable with a measured volume of syrup.
Rounding the illustrative DME figure to 2.44 kg yields 2.44 × 0.97 = 2.3668 kg of solids. That is 0.0032 kg, or 3.2 grams, below the original 2.370 kg. The extra decimal places show the arithmetic; they do not imply that the typical analyses or a kitchen scale have that precision.
The worksheet has answered one narrow question: what masses would match solids under these assumptions? It has not specified how much brewing water to add, what the finished batch volume will be, or how a changed ingredient affects the rest of the recipe. Keep those questions with the recipe author or a qualified brewer.
What should a useful comparison worksheet contain?
Use a short record that makes the missing information visible:

For the illustration above, the calculation row would read “3.000 × 0.79 ÷ 0.97 = 2.443298969… kg.” The remaining-questions row should still be open. Writing “same beer” there would claim more than the calculation established.
This is especially useful when a retailer proposes an alternative. Send the complete product names and the recipe reference rather than asking whether “dry equals liquid.” Ask which published conversion basis they are using and whether the recommendation applies to your recipe's intended volume.
Before treating a supplier reply as complete, check that it answers the question you sent. “Use the dry version” leaves the replacement mass and exact product unresolved. “Use this named product at this mass for this recipe and finished volume” is more specific, but still needs the accompanying recipe instructions. Save the answer with its date and source. That creates a retrievable decision record instead of leaving the next brew dependent on remembering which bag somebody meant.
Which format makes more sense to buy?
Our editorial purchasing order is straightforward: match the ingredient first, check the recipe quantity second, and then consider package size and documented storage. We have not brewed comparative batches or ranked the two forms by taste.
A larger package is not automatically the better purchase if it leaves an amount you cannot store according to its instructions. Likewise, the smaller-looking package does not necessarily contain less useful extract material; compare its specified mass and composition.
Storage directions are product-specific. Briess describes the named DME as moisture-absorbing and advises against storing opened bags. Its liquid sheet warns that unsuitable storage can reduce freshness and increase color. Neither instruction supports treating every opened retail container alike. Consult the current package and manufacturer for your exact format and pack. The dry and liquid sheets are the starting references, not a substitute for package-specific instructions.
What must this comparison never be used to decide?
Do not use the dry-solids equation to calculate bottling additions or decide that beer is ready to package. The Brewers Association's February 2026 guidance explains that unintended refermentation can rupture packaging. Priming calculations, completed fermentation, and package pressure limits require their own validated procedure.
This guide provides no heating, pressure-handling, equipment modification, or chemical-use instructions. Follow the equipment and chemical manufacturers' directions and consult a qualified brewing professional when those procedures are uncertain. Do not improvise with pressure-rated equipment.
Ingredient identity also matters for medical dietary restrictions. The FDA identifies wheat, rye, and barley as gluten-containing grains. Choosing powder instead of liquid does not establish gluten-free suitability. Check the actual ingredients with the manufacturer and discuss medically necessary restrictions with your clinician or dietitian; this comparison does not certify a homemade drink.
